Noodles and Fried Tofu (Japanese Style)

Ingredients Prepared:
4 pieces deep fried tofu (cut into large triangles)
1 package soba noodles (about 3/4 lb.)
4 green onions (finely sliced)
For Broth
6 1/2 cups of dashi (Japanese Stock)
3 tablespoons of shoyu (Soy sauce)
1 tablespoon of sugar
1 tablespoon of sake (Japanese alcohol beverage)
How to Cook:
Making broth
Heat the broth ingredients in a small pot
Mix Tofu and broth (dashi)
In a separate pot, simmer the tofu in a cup of hot dashi.
Cooking Noodles
Meanwhile cook the dried noodles (soba noodles), then rinse them in a colander using hot water, drain.
Serves
Then transfer the cooked noodles to the serving bowls. Place the tofu on top, pour the hot broth over the noodles and garnish with the green onions.
