Chinese noodle recipes, why should China? I picked that title because of the noodles is so popular in China and was first originated or manufactured in the country of China. Not only that, the noodles in the country of China is the main ingredient in chinese cuisine. But now other countries such as Japan. Korea, Taiwan, Singapore and other Southeast Asian countries (Vietnam, Philippines, Thailand, and Cambodia) has many using the noodles in the cuisine as essential ingredients.
In the Country of China, noodle is very popular with the term "mein" and "fun", therefore a lot of recipes with the term low mein and chow mein. Mein use raw materials of wheat flour for its production. While, fun noodle use raw rice flour or mung bean starch in their making. There is still much popular term that describe the noodles in various countries, for example in mandarin, noodles known as pinyin, in hongkong famous with cantonese and most countries in southeast asia use the term hokkien (min nan).
Noodles can be made from wheat flour, rice flour or mung bean starch. For variation of color or flavor can we add the eggs in the manufacturing process. If you want to making the variation on tenderness of the noodles, we can also add tapioca flour during the manufacturing process. The addition of egg are usually based only on wheat flour based noodle, while the noodles made from rice flour or mung bean flour using only water as a mixture. Noodles can also be stored for consumption in a long time by drying after the manufacturing process.
